I am clearing out my freezer. This meal is using up last week’s leftovers of rice and roasted squash/sweet potato/carrots. And some leftover red lentil curry [my own long ago adapted recipe from one like this: https://detoxinista.com/vegan-lentil-sweet-potato-curry/] where the sweet potatoes are roasted over just thrown in. Served on a mix of brown and red rice.

This curry freezes nicely.

And I mixed in frozen chopped spinach to add some green.

And a little afternoon snack of persimmon and pomegranate.
