I work at a meat market, and with our delivery this morning we received these two giant slabs of beef unlabeled and not on the order sheet.

Any idea what they are? Ownership said I can take them for $5 a pound.

They’re sort of stringy like a flank steak, but they’re way thicker than flanks I’ve seen before. Bigger one is 2 feet long. There’s no bones of any kind.

    Definitely a whole bavette aka bottom sirloin or sirloin flap.

    This is absolutely sirloin flap meat. $5/lb is a great deal for it even untrimmed.

    Skirt. Slice into 200mm sections. And then thinly ACROSS the grain to serve. Very fast to cook. Just keep flipping every 30s over high heat.

    I’m gonna say skirt steak because I grilled up 4 lbs of it yesterday and that’s what it looked like and that’s what it said on the package. 90 seconds a side on a very hot grill and it’s delicious! I ate way too much, then froze the rest for a nice dinner or two in the middle of winter.

    Looks like flap to me. Salt, pepper, garlic, hot and fast, pull at 125, rest it, slice against the grain.

    As indicated by others it’s a flap steaks/Bavette

    Skirt is much smaller.

    Roast like a steak basically. The make sure to cut thin slices against the grain after cooking.

    That stuff is big deal in the northeast US. Every meant market has its own marinade (most of them are soy heavy) They grill up quick and tasty.
