    * Oyster Mushrooms – 400g
    * All Purpose Wheat Flour – 100g
    * Corn Starch – 50g
    * Sparkling Water – 100ml
    * Sichuan Peppercorn Salt – 1 tbsp
    * Oil

    ###Instructions

    1. Hand break the oyster mushrooms into big pieces
    2. Add wheat flour, corn starch, and sparkling water, mix well until there’s no lumps left.
    4. Add enough oil to a pot, turn on medium heat. When the oil is hot enough (170-180C, you can stick a wood chopstick in the oil and there are many small bubbles forming around the chopstick means the oil is hot enough), dip the mushrooms one by one in the batter and fry until they are golden and crispy on the outside, turn them around when one side is done.
    5. Get the mushrooms out with a sieve, put them on kitchen paper to absorb the oil, then sprinkle the Sichuan peppercorn salt on, enjoy
