    Carrot paratha without stuffing

    Ingredients:

    – Wheat flour (3 1/2 cup)
    – Grated Carrot (2 cups)
    – 2-3 Green chillies
    – Handful chopped coriander leaves
    – Ajwain seeds (1 tsp)
    – Salt (1 tsp)
    – Oil

    1. In a mixing bowl, grated 2-3 carrots (approx 2 cup). Then add 1 tsp salt, chopped green chilies and coriander leaves, 1 tsp ajwain seeds and then combine whole wheat flour (approx. 3 1/2 cups)

    2. The carrots will release some moisture. Mix the ingredients together to form a crumbly mixture. Then, start adding water little by little to form a smooth, soft dough. Knead the dough for a few minutes until it’s pliable and smooth. Cover and set it aside for atleast 15 mins.

    3. Take a small portions and roll into a ball.

    4. Meanwhile, Preheat a skillet or griddle over medium heat.

    5. Take the dough balls and roll it out into a thin, round paratha. You can use a little dry flour to prevent sticking if needed.

    6. Place the rolled paratha on the hot griddle/skillet. Cook it until you see small bubbles forming on the surface.

    7. Flip the paratha, pressing down gently to ensure even cooking. The paratha should have golden brown spots on both sides.

    8. Remove the cooked paratha from the skillet and place it on a plate.

    9. Repeat the process for the remaining dough balls

    10. Your carrot parathas are ready to serve. You can enjoy them with pickles, or your favorite chutney.
