Peanut Butter Cookies That Melt in Your Mouth!

    * 1/2 cup (113g or 1 stick) salted butter, softened
    * 1/2 cup (120g) creamy or crunchy peanut butter
    * 1/3 cup (70g) granulated sugar
    * 1/2 cup (100g) brown sugar
    * 1 large egg
    * 1 tsp vanilla extract (optional)
    * 1 1/4 cups (160g) all-purpose flour
    * 2 tsp baking powder
    * Additional granulated sugar for rolling (optional)

    1. Preheat your oven to 350°F (180°C) and line baking pan with parchment paper.
    2. In a large mixing bowl, beat together the softened butter, peanut butter, granulated sugar, and brown sugar until the mixture is creamy and well combined. This can be done with an electric mixer or by hand with a wooden spoon.
    3. Add the egg and mix until well combined. Then, mix in the vanilla extract if using.
    4. In a separate bowl, mix together the flour and baking powder.
    5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can make the cookies tough.
    6. Use a cookie scoop or your hands to form balls of dough, about 1 to 1.5 inches (2.5 to 4 cm) in diameter. You can roll the dough balls in additional granulated sugar if you like for a slightly crispy exterior.
    7. Place the dough balls on the prepared baking sheets, leaving some space between each one. You might need to bake in batches.
    8. Use a fork to create a pattern on top of each cookie by gently pressing down on the dough balls. This also helps flatten the cookies slightly.
    9. Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown. The cookies will continue to set as they cool.
    10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once cooled, they are ready to enjoy!

    I love peanut butter cookies and never thought about using crunchy peanut butter though! Does it add some crunch to the cookies like you would think? I also like to put a Hershey’s kiss in the center of them when baking around Christmas time. Thanks for sharing your recipe!
