    * 1 cup (120g) all-purpose flour
    * 2 tablespoons sugar
    * 2 teaspoons baking powder
    * A pinch of salt
    * 1 cup (240ml) milk or buttermilk
    * 1 egg * 2 tablespoons (30 ml) melted butter
    * 1 teaspoon vanilla extract (optional)
    * Cooking spray or additional melted butter for the griddle

    1. In a mixing bowl, whisk together the dry ingredients.
    2. In another bowl, beat the egg and then add the milk, melted butter, and vanilla extract (if using). Mix until well combined.
    3. Pour the wet ingredients into the dry ingredients and stir until just combined. It’s okay if there are a few lumps; overmixing can make the pancakes tough.
    4. Preheat a griddle or non-stick pan over medium-high heat. Lightly grease the griddle with cooking spray or a small amount of melted butter. The griddle is ready when a few drops of water sizzle and dance on the surface.
    5. Pour 1/4 cup (60 ml) portions of the pancake batter onto the griddle for each pancake. Cook until bubbles stop forming on the surface and the edges look set, usually 2-3 minutes.
    6. Carefully flip each pancake with a spatula and cook for another 1-2 minutes, or until they are golden brown on both sides and cooked through.
    7. Remove the pancakes from the griddle and serve immediately. You can top them with maple syrup, fresh berries, sliced bananas, whipped cream, or any other toppings of your choice.
