(I’m in SoCal), potato plant died so I dumped the pot and found these little guys. 😁 I have 2 beginner questions:
1. They’re kinda small, should I have left them in the dirt to get bigger?
2. Is it okay to cook and eat these, or do you have to “rest” them?
All in all, it was a pretty fun experiment with some sprouting potatoes I found in my refrigerator last spring. Thank for any advice on growing potatoes in pots.

If you were planning to store them, then you’d let them dry before stashing them away, but they can be eaten as soon as you like.
Also, once the plant dies, the potatoes are not going to get any larger.
So, scrub them off, prepare them how you like, and enjoy!
Keep the small ones as seed potatoes for next year. Cook the rest and enjoy. Highly satisfying to eat fresh home grown spuds.
Yes you can eat them. They probably won’t store well unless you can keep them in ideal conditions so I’d enjoy them this week.
Getting large potato yields, especially in buckets, can be a challenge because you have to stay on top of your watering and feeding but you did great for your first time! I hope you enjoy them.
Steam them, or roast them in the air fryer with some oil and Parmesan!
Yep. How ever you cook them. Eat ‘em. Good job short season or even a small sprout. The potatoes we’ve had grown by our hands. Yummy.
