  4. This is very good. Now, have you eated fried squid with home made allioli the traditional way -in a mortar-? It's very good too. With mortar homemade maonesa (with pepper, salt, no vinegar there, just lemon juice, one egg yolk, olive oil), it's also very good.

  6. Eva knows how to cook calamari, she use simple ingredients of high value and taste. Fried calamari absorb large quantities of oil. I prefer to taste Extra virgin Olive oil. Bravo chef, Eva.

  7. Cute, I think maybe, the goldilocks recipe is somewhere in between. Marinate in buttermilk to tenderize and perhaps a bit of baking powder and rice flour or corn starch for extra crispness. Just lemon and salt so you can enjoy the taste of the calamari. Just me saying!

  8. When he dipped the piece into mayo, ketchup and pesto I instinctively screamed! For the waste of perfectly good ingredients that if you mix where they don't belong and amass all together, you can only throw away in the trash bin. I thought such reactions were a bit staged in videos but now I understand how they're absolutely instinctive if you're Italian, or if you just know how food works

  9. You are a coulpe of nuts! Lol…love you two! Eva, no need to taste yours…i know its delicious. Now Alfredo (Aka Harper) looked a little over done and IF you have to do it with dipping sauce, that scares me. It has to be really good BEFORE you use a dipping sauce in my opinion. Ive had calamari cooked a few different ways…none had a dipping sauce. It would be like putting Ketchup on a high end steak! Boun a pettiti
