1. Peel and cut the potatoes into thin slices, steam for 15 minutes until they are completely cooked. Use a potato masher to mash the potatoes, add potato and tapioca starch, knead into a dough. If the dough is still sticky, add a bit more potato starch. Let the dough rest for 10 minutes. 2. Take a small portion of the dough and roll it so it turns into a thick noodle. Boil water, when it’s boiled, add the noodles and let them cook for about 3 minutes, take them out and put them in two separate bowls. 3. In each bowl, add 2 tbsp soy sauce, 1 tbsp dark vinegar, 2 tbsp child oil, half the chopped garlic and scallion, mix everything and enjoy

Doesn’t soy sauce have gluten?
I’d add shrimp. It looks like it’d be delicious with seafood.
