Had a few things to use up in the fridge.

Leftover smoked salmon, pre-cooked lentils, half a head of radicchio, bell peppers, and cucumber. Chopped all of that and some pickled onions. And added some lemon juice, olive oil, champagne vinegar, sumac, and ground chilies. Also another no recipe combo. 😂

This was a great mix with a lot of crunch. Radicchio is great because it has a long shelf life too.
