There is a restaurant near me that makes great* fried chicken sandwiches. While you probably shouldn’t have fried chicken sandwiches, the best part for me was always the delicious, mayo free, coleslaw served on top. I have been a mayo hater since childhood, so when I discovered this place had a mayo free slaw, I was sold. The also served it as a salad and I always got extra.

I have always loved vinaigrettes and vinegar based items so this was perfect.

In a nutshell it is cabbage, a red wine vinaigrette made with olive oil, jalapeños, onions, and herbs. I often tweak – I use a Serrano pepper or red pepper flakes. Or use different herbs if they are available. Or none if not. This is a great side for Mexican or Indian or a bbq.
