Hi guys, new to this subreddit

I tried a recent recipe for a persimmon ice cream.

Link below, but basically requires:
1lbs roasted persimmons
2 cups heavy cream
1 cup whole milk
1/2 cup OJ

And a few various spices.

My husband and I have recently been trying to avoid adding too much sugar, is the no sugar in this recipe why the texture is off? Could we add xantham gum instead? If so how much?
