1. Optional: Peel the chickpeas (the skin) if you want your hummus to be even creamier and richer. This step is completely optional. 2. In a food processor, blend the cooked chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin and salt. 3. Process the ingredients until smooth, scraping down the sides of the bowl as needed. If the mixture is too thick, add water, one tablespoon at a time, until you reach your desired consistency. 4. Taste the hummus and adjust the seasoning if needed. Add more salt, lemon juice, or olive oil to suit your preferences. 5. Once the hummus reaches a creamy consistency, transfer it to a serving bowl. 6 6. Before serving, drizzle with extra virgin olive oil (or melted butter with chilli flakes), sprinkle with paprika, and garnish with freshly chopped parsley if desired. 7. Serve the hummus with pita bread (check my recipe below), vegetable sticks, or your favorite crackers.
