What an absolutely perfect meal. And I preface this by saying that I am not a humongous French food ‘craver’ but the execution and the flavor in the sauces were all A++. The Leek and the foie were real standouts. While the chicken in bladder was, of course, very special, some of my group noted it fell a little dry for them.
I’m assuming they lost 1* when Bocuse died but they absolutely deserve it back. If you find yourself in a few hours of the place, I would definitely make the trip.
Within 4 weeks I hit Noma, Geranium, Cellar con Roca and this and this was a total standout with Noma.
