    **Prep Time:** 15 Minutes (Boiling Pasta)

    **Cook Time:** 15 Minutes (side by side to boiling pasta)

    **Total Time:** 15 Minutes

    **Serving:** 3-4

    **Ingredients:**

    * 16 oz or 1 lbs Pasta
    * 1 Tbsp. to taste
    * 1/2 the recommended amount of water to boil Pasta
    * Save 1 Cup Pasta water
    * 2 Tbsp. Olive Oil
    * 1 Tbsp. Butter (Vegan)
    * 2 Tbsp. minced Garlic
    * 1 Cup diced Onions
    * 2 Cups of Cherry Tomatoes
    * 1 Tbsp. Tomato Paste
    * 1 Tbsp. Harissa
    * 1 Cup Heavy Cream (Vegan)
    * Salt to taste
    * Black Pepper to taste

    Optional Garnish:

    * Parmesan Cheese (Vegan)
    * Freshly Chopped Parsley

    **Direction:**

    1. Boil the pasta to al dente per package instructions, but only use half of the recommended water so the water is extra starchy. Once the pasta is boiled, save 1 cup of the starchy Pasta water to use in the sauce. Drain the Pasta and set aside.
    2. In a large pot over medium low heat, add the Olive Oil, Butter, and Garlic and allow the Garlic to cook for 1-2 minutes. Then add the Diced onions and allow them to turn translucent, this takes 3-4 minutes. Then add the Cherry Tomatoes, and cook them so they burst and breakdown. Use the back of the spoon if necessary to crush them.
    3. Add the Tomato paste and combine until the Tomato paste is dissolved. Then add the Harissa, and stir again to combine.
    4. Add the Heavy Cream (Vegan), along with Salt and Black Pepper to taste. Stir and add in a 1/2 cup of the Pasta water and allow the sauce to thicken.
    5. Add the cooked Pasta, stir to coat all Pasta with the sauce.
    6. Top with optional Parmesan Cheese and/or freshly chopped Parsley.
    7. Enjoy 🙂

    I love this recipe! I did make a mistake on my first try however, The recipe I have calls for 3 tablespoons of harissa…I put in the entire container. I was asked to make more!
