Gochujang sauce with an Asian medley

    * 1 large aubergine (eggplant), cut into own way – I used few mini aubergines
    * 2 cups broccoli florets
    * 2 tbs gochujang paste
    * 2 tbs agave syrup (or maple syrup)
    * 2 tbs soy sauce (low-sodium)
    * 1 tbs sesame oil
    * 2 tsp minced garlic
    * 1 tsp minced ginger
    * 2 tsp vegetable oil (for air frying)
    * Sesame seeds and chopped green onions for garnish (optional)

    ###Instructions

    1. Preheat the Air Fryer/Oven 375°F (190°C).
    2. In a large mixing bowl, combine the aubergine cubes and broccoli florets.
    3. Drizzle 2 tbs of vegetable oil over the vegetables and toss until they are evenly coated.
    4. Place the oiled vegetables in the air fryer basket (or oven) in a single layer, ensuring they are not overcrowded.
    5. Air fry for 15-18 minutes, shaking the basket halfway through, until the vegetables are tender and have a golden brown exterior.
    6. In a small bowl, combine the gochujang paste, maple agave syrup, soy sauce, sesame oil, minced garlic, and minced ginger.
    7. Whisk the sauce ingredients together. Adjust the sweetness or spiciness to your liking
    8. Once the vegetables are done, transfer them to a large mixing bowl.
    9. Pour the gochujang maple sauce over the air-fried vegetables and gently toss until the vegetables are well coated with the sauce.
    10. Transfer the glazed vegetables to a serving platter.
    11. Garnish with sesame seeds and chopped green onions if desired.
    12. Serve the Gochujang Maple Glazed Air Fried Vegetables as a side dish or over cooked rice for a complete meal.
