What do you vegetarian and vegan people like in your Kimbap rolls ?

I think I’d try to mimic temple bibimbab flavors- lots of different types of namul + some carrots/cabbage for crunch 🙂

In Buddhist temples, they would use fried tofu as the main protein and a must would be braised burdock root which is standard. Alternative would be to use mushrooms and stir fry them in a bulgogi sauce.

Kimchi gimbap is popular. Just use vegan kimchi.
When I was a kid, my mom used to use hotdogs quartered lengthwise in gimbap. I never tried it with a meat substitute hotdog, but that could be worth trying.
