Took a somewhat last minute trip to Scandinavia and managed to get off the waitlist at Jatak. Great meal. Desserts and service were the weaker points but everything else was excellent and I thought it was a lot stronger than the one stars I’ve been to in the states (my only comparison points). Menu as follows :
• Celtuce. Nori and Sambal
• Pike Perch. Tuna and Apple.
• Monkfish. Fermented Chili and Chickpea.
• Sunchoke. Rice Noodles and Aji Amarillo
• Brassicas. Szechuan Pepper and Dried Shrimp
• Venison. Carrots and Sesame.
• Koshikari Rice Sorbet. Pumpkin and Almond.
• Japanese Cheesecake. Woodruff and Chantilly.

Hmmmm, everything does look delicious, but it seems the playing style is definitively minimalistic, and washed out colour wise for some dishes. It’s actually pretty cool to see stuff plated this way. The Venison course also appears to be very fragmented….
Regardless of all of this, it all appears and sounds delicious. The monkfish dish sounds particularly appealing!
