I like to get creative with my pizzas, so whether it’s pineapple or passion fruit, I always say: try before you deny! There’s a time and place for authenticity, but it shouldn’t be the only way. So if you ask me, there is no debate. Just good pizza, and those afraid to try it.

I used my 60% poolish for this pizza and baked it in the Gozney Roccbox pizza oven. Locally smoked ham, fresh pineapple (let it sit on paper towels in the fridge for an hour to remove some moisture), fresh mozzarella, and a pineapple habanero hotsauce which definitely took the pizza to the next level.

What does your go-to hawaiian pizza recipe look like? NY Style crust? Any unique additions?

  1. After preheating the oven on high for 25 min, did you lower the temperature before putting pizza in the oven and if so how much lower? Thanks! Great pizza
