Help- I just put this Roquefort into a bunch of grits. It has a pinkish beige layer on the outside. I cut off that part but now I’m afraid of it. Is this normal for this blue?

You see this every once in a while with Roquefort. It probably stands out a lot more with how white the cheese is. I found an article on it and so far the tl;dr appears to be mainly cross-contamination from smear-ripened cheeses.

It’s fine. The surface that is up against the foil wrap can have all kinds of colors. It will not kill you or make you sick.
