Dinner reservation. L’Ambroisie does not offer a tasting menu, thus the small number of dishes in this post specifically. Overall, given the high price of the food (and especially the wine), I just ordered their signature dishes.

Langoustines between sesame seed feuillantines with a curry sauce (9/10): Practically a perfect dish! The langoustines were perfectly cooked, and the dish worked incredibly well. The feuillantines added a wonderful crunch, the sauce was rich and flavorful though not spicy, and the langoustines and spinach had a slight citrus note that really brought everything together. One of my favorite seafood dishes ever!

Sea bass escalopes with sliced ​​artichoke, spinach, and Kristal caviar (8/10): Still incredible, but the dish didn’t work as well as the previous one. While everything was cooked to perfection, I would have actually preferred less caviar, as it gave the dish slightly too much salinity. This dish also gets knocked down a bit because of the quality of the caviar. I expect better given the price. The artichokes were a great addition.

Fresh and matured cheeses (10/10): One of the best cheese courses I’ve ever had. Hard for a restaurant of this caliber to mess up.

Tarte aux chocolat Bernard Pacaud (9/10): Incredible! It’s very hard to describe, but the tarte is perfectly rich, airy, light, dense, sweet, bitter, and umami all at the same time. Only Guy Savoy’s chocolate tartlet and the chocolate dessert I had at Central are better chocolate desserts.

Things not pictured: One quite forgettable thing was the bread and amuse-bouche, which was just a nice consommé with balls of foie gras. I was also given a tiny cream and fruit tartlet and chocolate at the end with my coffee.
