Feta and spinach filo rolls

* a handful of spinach leaves
* 100 g feta, crumbled
* 1 egg
* 6 sheets filo pastry
* 4-5 tbsp melted butter
* 1 tbsp sesame seeds

Heat the oven to 200C/fan 180C.

In a bowl, combine crumbled feta, chopped spinach leaves and one egg. Mix well.

Take one sheet of filo and place on the worktop with the shorter edge facing you. Brush with melted butter.

Start at the bottom of the sheet, scrunching away from you to gather the filo sheet in an accordion-like fashion.

Fold in the middle. Place the feta filling in the middle and fold into half moons. Brush with more butter and sprinkle with sesame seeds.

Bake for 20-25 minutes or until crisp and golden.
