Slow Cooker Chicken Bacon Rice Casserole

2 pounds skinless boneless chicken tenderloins
1 pound bacon, cooked and chopped
2 (10.5) cans cream of chicken soup
1 packet (3 Tablespoons) Ranch dressing mix
2 cups milk
1 cup regular long-grain rice
1 1/2 cups shredded cheddar cheese

Spray a slow cooker with nonstick spray. Place chicken in the bottom.

Mix together the cream of chicken soup, bacon, ranch dressing mix, half of the cheese, milk, and the rice. Pour this over the chicken. Sprinkle the remaining cheese on top of the mixture.

Cover the slow cooker and cook on high for three to three and a half hours. If the rice mixture becomes too thick, adding a little water or chicken broth or additional milk will thin it out. 

TO CONVERT THIS TO AN OVEN MEAL:
Place the chicken bacon rice mixture in a Dutch oven or a large casserole dish and cover tightly with a lid or aluminum foil. Bake in a 325° oven for 60 minutes, or until the chicken is done all the way through.

  3. Chicken didn’t cook, rice never developed, runny. Cooked in oven longer and hotter than recommended. Very expensive trial.

  4. Hey. It’s Wednesday 11/29 and I just watched you senate bean soup vid. I went to add a comment and kept getting a 403 error. So I jumped off and went to go back in with a simpler comment, thinking the prob was with my comment, but I couldn’t find the vid. It isn’t in my history, and when I went to Come Sit At My Table subscription, it wasn’t there either. ??? I just wanted to say the celery onion carrot trio is French and called Mirepoix, named after the man who came up with it. The Holy Trinity is Cajun/Creole and the difference is they swap out the carrot for bell pepper. The Spanish have one called Sofrito that adds garlic and tomatoes and olive oil. Would love to know what happened to your senate soup vid. I was going to go back and like, but 🤷🏼‍♀️

  5. All of your recipes look so good. I was one who said you shouldn't lock the lid but I didn't realize that some lids have vents. Mine does not so it says not to lock it. Sorry

  6. I make this all the time. I put 1 can of cream of mushroom and 1 can of cream of chicken with some cheesy garlic Texas toast and a salad is heaven to me. 👍
