I’ve been tweaking this recipe for weeks. I don’t like using protein powder (odd aftertaste) so instead I added 30g dry “complete” pancake mix. I tried sugar free vanilla syrup instead of vanilla extract and it had a bad after taste. The erythritol doesn’t give it a bad taste in my opinion. The whole recipe is about 300 calories for the entire loaf. I divide it into 6 fat slices of 50 calories each and add sugar free marmalade for an extra 10 calories. Remember– this recipe is oat fiber flour (basically sawdust, not digestible to humans) so the flour has no calories. The pancake flour and egg binds it together.

    Also cooking time will vary. I make this in a little convection toaster oven because it’s just one loaf and I don’t want to use my giant oven for it.

  2. What brand oat fiber do you use? I’ve read different brands give different results. I’ve been using nununaturals but I’ve heard Modern mountain is even better…

  4. Looks great! I don’t have pancake mix. Can I substitute it with protein powder? If so, whey or casein?
