Today I had a salad for lunch with raddichio, avocado, orange, bell peppers, white beans, pumpkin seeds, and shrimp. And I had the last of a bunch of parsley to use up.

I didn’t make a dressing – I did oil and vinegar: citrus champagne vinegar, blood orange balsamic vinegar, and some olive oil.

The shrimp were made in the air fryer with Trader Joe’s Adjika seasoning blend and garlic powder.
