Aldi has this semolina porridge and it’s so good, I made my own recipe for it because it’s cheaper and has more volume. I was surprised because my version tastes so similar. Mine came to 54 kcal/6,2g Protein per 100g, the Aldi version has 77 kcal/8,0g Protein per 100g. Recipe is: Cook 30g semolina with 250 ml almond milk + 150 ml water. When it thickens (after like 5 mins maybe) take from heat and stir in 30g casein whey with a whisk(mix fast to avoid clumps). Add cinnamon and sweetener (I did vanilla flavour powder). Let it cool off in the fridge and your done:)

    LOVELY!!!! This looks gorgeous and I have about 5kg of semolina I’ve been staring at for months, do you know if you can use regular whey protein powder instead of casein ?

    What is the consistency like? I like my pudding on the thicker side, I usually do 500ml (almond milk and water mixed as well) to 33g of semolina, but I usually need to add konjac or xanthan to get it to my liking…
    Does the protein powder thicken it up as well?
