    1. Preheat your oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper or a baking mat.
    2. In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes on medium speed).
    3. Beat in the egg and vanilla extract (optional) until well combined.
    4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and cinnamon.
    5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    6. In a small bowl, combine 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon for rolling.
    7. Shape the cookie dough into balls (1-1.5 tbsp each) and roll each ball in the cinnamon-sugar mixture.
