  1. ###Ingredients

    * 1.5 tbsp avocado oil or neutral oil
    * 1 tsp cumin seeds
    * pinch of hing (asafetida)
    * 1 medium onion, finely chopped
    * 1 tbsp grated ginger
    * Ground spices: 1 tsp garam masala, 1/2 tsp turmeric, 1/2-1 tsp red chili powder
    * 4 white potatoes, quartered or cut into 1-inch pieces
    * 2 medium tomatoes, blended into a paste (makes about 1.5 cups paste)
    * salt
    * 1.5 cups frozen peas
    * 1 tsp kasoori methi
    * 1 tsp kashmiri chili powder (optional, mostly for color)

    ###Instructions

    1. Heat oil in a medium pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds or so. Add hing and continue for another 30 seconds.
    2. Add onions and cook until translucent. Add ginger and cook until the raw ginger smell dissipates.
    3. Add all ground spices except for garam masala
    4. Add the potatoes and coat in the spices and aromatics. Pour the tomato paste, add a big pinch of salt, and cook until the juices evaporate – about 5-7 minutes.
    5. Add 1 cup water and peas. Cover and simmer for about 15 minutes, until the potatoes and peas are soft. Add more water and salt if necessary!
