Hello, first time canner. I plan on water bath canning a couple of recipes with my friend today. These are the recipes i intend to follow:

Based on what I have read, I’m pretty sure I can change what spices are used or add a small amount of spices if desired and it won’t create an unsafe product.
For example I’d like to add cinnamon to the apple jelly and maybe remove the mustard seeds from the candied jalapenos.
Let me know if you think this would be a safe choice to make, or will critically ruin it.

Those sound like safe adjustments to me! From my research, it’s ok to take out spices or add in powdered spices, as long as you aren’t adding in a ton and there aren’t any thickeners or dairy products.
You could also consider [this recipe](https://www.foodiewithfamily.com/candied-jalapenos/) for the Jalapeños. One tip: I have a powerful stovetop and I’ve found it preferable even with that to reduce the syrup further than they suggest with their timings.
Those would be safe change to make! Dry spices can be safely omitted (in any quantity) or added in small amounts (1/2tsp per pint is the most conservative suggestion, 2tsp is the least conservative).
