ARROZ CON DULCE 101
For the Spice Tea:
-4 cups of water
-7-8 All Spice
-3-4 cinnamon sticks
-3 cubed pieces of ginger
-3-4 Star Anise
-8-10 cloves
Cook the rice in the Spice Tea for 15 minutes on medium low heat until the water evaporates and rice has absorbed it all.
For the rice:
-2 cups of short grain or medium grain White rice
-2 cans of evaporated milk
-2 cans of coconut milk
-1/2 stick of salted butter
-1 tsp vanilla
Cook the rice for another 15 minutes in medium low heat (Constantly Stirring) before adding
-1 can of condensed milk
-1 cup of Brown sugar OR* 1/2 cup White sugar and 1/2 cup Brown sugar
-1 tsp Nutmeg
-1/2 cup of raisins (optional soaked in whisky overnight)
Cook for 10 more minutes constantly stirring. **Avoid your rice from sticking to the bottom of the pot** Serve and Enjoy
