Hi all! I’m a first time canner and I just made cranberry habanero jelly ([this](https://pomonapectin.com/cranberry-habanero-jelly/) Pomona’s recipe). While I was lowering the jars into the canner, they all fell over (some even inverted completely 😭) — I guess the heat was too high and the rolling boil destabilized them. I removed them from the water and re-tightened the rings and then lowered them again. They remained upright through processing and it looks like they sealed fine — are these a safety hazard? I made these at the request of a family member for Christmas, I figure if this is enough of an issue I could throw them in the fridge and try to finish them in the next few weeks.
One other thing I’m a little worried about is that I was using a makeshift rack made of rings, some of which were a little rusty. The water in the canner looked like it could’ve been a little rust coloured. I figure if any water got into the jars it’s a toss.
