Vegetable Congee

    * 1/4 cup frozen sweet corn
    * 1/4 cup carrots, diced
    * 1/2 cup broccoli, roughly chopped
    * 1 tbsp ginger, minced
    * 1 tsp salt
    * 1 tsp mushroom seasoning
    * 1/2 tsp white pepper
    * 1/2 cup short grain rice, frozen
    * 5 cups water

    ###Instructions

    1. Rinse the rice and store in a container in the freezer overnight or at least for 3-4 hours.
    2. Heat up the water in a pot. Once boiling, add all the remaining ingredients including the rice. Mix everything well, cover with a lid, and simmer for 15 minutes. Enjoy immediately!

    Curious why you use frozen rice? My partner makes congee using leftover rice and puts shredded pork along with salted preserved boiled eggs.
