Just wanted to brag a little lol, got my cellar done and shelf’s in and organized (most jars 4 or 5 deep). I’m also going to build some wood slat shelf’s to store squash and pumpkins

I had a question, I plan on also using it to age deer and as a meat cooler, I hotwired an AC unit and it gets down to 35 f. I know they say you’re supposed to store canned food between 50-70. When the AC is off it stays around 55 in there. Is it going to hurt the canned food if they’re at 35 for 2 or 3 days a couple times a year and a max of 10 days when I age deer?

    I do not see where that would be an issue. My canned goods storage is at 35-55 degrees. If I were you I would check the flats/lids at least once a month to see if they become unsealed. I have had that happen when there was a drastic temperature flux from 40 degrees F to sixty-five when a freaky warming spell hit. I also have my shelves bolted to wall studs and have wood slats to prevent the jars from shifting off the shelves during earthquakes. Good to see you are storing filled jars without the rings/bands.
