Moro con Coco, a seasoned rice with coconut milk that has an incredible buttery taste

    * 1-2 tbsp avocado oil
    * 1/2 small yellow onion, diced
    * 1/2 small green bell pepper, diced
    * 1/2 small red bell pepper, diced
    * 3 cloves of garlic, crushed or finely minced
    * 1 small bunch cilantro, minced well
    * 2 tsp sazón
    * 1/2 tsp adobo
    * 3 tbsp Spanish olives, halved (optional)
    * 1 tbsp tomato paste
    * 1 vegetable bouillon cube or 2 tsp vegetable bouillon paste
    * 1, 15 oz can of guandules, rinsed and drained
    * 1 1/2 cups full-fat canned coconut milk
    * 2 1/2 cups water
    * 3 cups Jasmine rice, rinsed
    * Kosher salt

    ###Instructions

    1. Heat 2 tbsp of oil in a large heavy bottom pot over medium low heat. Add the onions, bell pepper, garlic, and minced cilantro ends then sauté for about a minute until fragrant.

    1. Stir in the sazón, adobo, olives, tomato paste and bouillon and continue to sauté until evenly mixed.

    1. Pour in the guandules then stir well. Taste the broth and if you feel it needs more salt, add a generous pinch. Once everything is well heated pour in the coconut milk and water then stir well and bring everything to a boil.

    1. Stir in the rice and simmer over medium low heat, making sure to stir regularly to help prevent the rice from sticking to the bottom of the pot.

    1. Now, wait until most of the liquid has evaporated. The rice should look glossy at this point. Add the remaining cilantro then cover with a tight fitting lid and lower the heat to low.

    1. Steam the rice covered for 30 minutes, then remove the pot from heat. Keep the lid on and allow to rest for 10 minutes. Fluff your rice with a spoon, then serve and enjoy.

    Is it just me, or everyone just closes the window, when instead of recipe they see a person eating and making clearly overexaggerated facial expression?

  3. This is arroz con gandules with coconut milk, not moros. Moros is black beans and rice.

    Is it just me, or does anyone else find the position of the captions weird? Feel like I was looking away from the video while reading the captions.
