    Spiced Onion Stir-Fry recipe (Sabji/Bhaji)

    Ingredients:
    – 3 tbsp oil
    – 1 tsp mustard seeds
    – 1 tsp cumin seeds
    – 1/2 tsp asafoetida
    – 1/2 tsp turmeric powder
    – 6-7 green chilies, vertically cut
    – 1 large onion, vertically sliced
    – 1 tsp salt
    – 1 tsp cumin powder
    – 1 tsp coriander powder
    – 1 tsp garam masala
    – Red chili powder (as per your spice level)
    – Finely chopped coriander leaves for garnish

    Instructions:

    1. Heat the Pan:
    – Place a pan on medium heat and add 3 tbsp of oil. Allow the oil to heat.

    2. Temper the Mustard Seeds and Cumin Seeds:
    – Once the oil is hot, add 1 tsp of mustard seeds and wait until they splutter.
    – Add 1 tsp of cumin seeds and sauté until they release their aroma.

    3. Infuse Aromatics:
    – Reduce the heat to the lowest setting.
    – Stir in 1/2 tsp of asafoetida and 1/2 tsp of turmeric powder.

    4. Add Green Chilies and Onions:
    – Add the vertically cut green chilies to the pan.
    – Introduce the vertically sliced onion and 1 tsp of salt. Mix thoroughly.

    5. Spice it Up:
    – Incorporate 1 tsp of cumin powder, 1 tsp of coriander powder, 1 tsp of garam masala, and red chili powder according to your spice preference. Mix well.

    6. Garnish and Saute:
    – Sprinkle finely chopped coriander leaves over the mixture.
    – Saute for about a minute, ensuring not to overcook to preserve the crunchiness of the onions.

    7. Serve:
    – Once the stir-fry is ready, transfer it to a serving dish.
