Ok, I’m relatively new to the canning world but have a background in food science. I bought the presto electric canner for reasons and did one batch of broth in it following a basic recipe (just bones and water cooked in an instant pot for an hour). I followed the canning procedure to the letter. Afterward, I started feeling uncomfortable with the lack of external pressure gauge and ended up ordering a stovetop pressure canner for all future canning projects. The question is, do I trust the batch broth I made? I hate to toss it all. All the seals are good and it looks/smells fine…what would you do?

  2. No, don’t trust it. Currently, there are no model of electric canner approved for canning practice.

    Presto haven’t released the information of their testing (they say they meet the USDA guidelines, but haven’t proved it) and there are no independent testing by the NCHFP published (it’s in progress, afaik).
