Salted cod – rehydrated for a couple days, regularly refreshing the water. Sautéed with onions, bell pepper, and boiled potato. Baked in hot oven with LOTS of good olive oil until crispy and browned. Topped with olives, hard boiled eggs, and parsley. Serve with portuguese RED wine. Yes, fish with red wine. I know. Paradoxical.
