I did some canning for family Christmas gifts. All recipes were either from a cook book for boil water canning or from the Bernardin leaflet. I know it looks like there’s a lot of air, but I have a measurer for headspace. They were totally set until I started handling them, and the seals are intact. I’m very disappointed! Any insights to what happened and what I can do in the future? The one note I will make, for the relish on the right it made one full cup more than the recipe stated for yield. And for the strawberry jelly on the left, it actually made a half cup less than the recipe called for, in that case I had a 1/2 cup jar that sealed but was a bit large on head space so I put it in the fridge. Help!
