Ingredients: * 1 medium-sized beet, peeled, cooked and grated * 1 cup (240g) thick and strained yogurt * 1 clove garlic, minced or finely grated * 2 tablespoons (30ml) olive oil * 1 tablespoon (15ml) fresh lemon juice * Salt to taste * Optional toppings: Chopped fresh mint or dill for garnish, walnuts/roasted split almonds
