All right Kendrick we’re ready to start popping corn we’re using Tallow as our oil you could use any kind of fat in here probably not butter we’re going to use Tallow we’ll put about a tablespoon maybe a little more going to turn our bur burner to medium and then when that’s all melted

  1. This looks delicious! Also, I want to say thank you for showing your "mistake" when the caramel boiled over – I think a lot of people would have done it the same way, so now we all know! I'm glad that it seems nobody got a bad sugar burn. It would have been very easy to cut that moment out and just say later "don't add the baking soda too soon or it'll boil over", but you left it in for us 🙂

  2. When I make Carmel corn, I usually quadruple it too. I found that the pan insert from your counter top roaster, holds 4 batches perfectly and can fit in the oven.

  6. I love how you press the buttermilk out of your butter… it looks almost just a dough. I’ve tried that and my hands just melt it, so I use an icing spatula to “knead” my butter, but it takes FOREVER.. I need an electric churn like yours, too. I do mine in the food processor, and it is hard on my processor motor to run for such a length of time..

  11. My mother was a candy maker and often had her batches start to boil over. She would take a larger tablespoon of cream and drip some of the cream into the boiling candy. Just a few drops settles it right down and of course you don't want to use any more than a few drops at a time. She did it when she made peanut brittle, caramel and fudge. I miss her peanut brittle at Christmas time. It was so delicious and a special treat.

  17. Our recipe for Carmel popcorn is so very similar! I think the only difference is that it has both maple syrup and honey in it instead of the corn syrup & brown sugar.
