Hi all, my wife has just waterbathed some halved apricots. After the boiling process, the fruit has moved to the top in all 10 jars. There also appears to be some liquid loss. We are wondering if we have made a mistake somehow, or if the fruit will settle back down to the bottom once it cools? I was reading that it may be a possible siphoning issue?

We used an induction cooking plate on a boil setting.

Any suggestions are welcome.

  2. Fruit Float! It’s irritating, but provided you followed proper canning procedures and used a safe recipe, your apricots will be fine. Fruit float occurs because air is trapped in the cells of the fruit, making them buoyant.
