I think I got it at a nice medium rare, maybe a touch under? This is a prime top sirloin from Costco, reverse seared

    That’s perfect. I’ve never done a reverse sear though. I have some steaks that look about that size and thickness. What temp did you have them in the oven at?

    Looks perfect, however this is probably one of my least favorite cuts. Its like Fillet with none of the upside. How did it taste?

    Very nice, just rest it more. The blood on the plate should not be there.
