Smoked my first brisket over Christmas. Traeger silverton with signature blend pellets. Christmas Eve did the full trim and hit it with meat church holy cow + holy gospel. Let it adhere overnight. 4:30 pm on Christmas Day put it on at 185/200 degrees overnight until 6:00 am. Turned it up to 225/250 temp was bouncing around because it was cold outside. Around 11:00 am and about 165 internal I wrapped in butcher paper with some cider vinegar and put it back on the grill at 275. Pulled it around 2:30 at 205 Internal and let it rest for 3 hours. Turned out amazing!! First brisket and first overnight cook. Anyone who says you can’t get bark or a smoke ring on a pellet grill is lying 🤣
