Dear Food Diary, for my lunch today, i made a Kale Salad, one of my favorites, ever since i tried it first time at a local French restaurant me and my friend Hana meet up once in awhile. I was resisting Kale for the longest time, because it gets a bad rap.Now that we`ve met,i can say that, It is not bitter, or tough to cook, very similar to spinach, packed with nutrients, and it`s very versatile as to what to pair it with. I made Kale and Mushroom Risotto the other day, so i made sure to leave some fresh Kale for a salad. It Goes well with vinaigrettes, i have not had it with a creamy dressing yet. My recipe is below, you can add or remove ingredients as per your preferences. Goes great with salmon on top to.
Ingredients:
Dressing:
1/4 cup Olive Oil
1/4 Rice or Red Vinegar
2 Tbs Agave or Honey
1 tsp Italian Herb Seasoning
1/2 tsp Red Crushed Pepper
1/4 tsp Salt
1/4 tsp Black Pepper
1 tsp Garlic and Cheese Powder
Salad:
3 cups kale-washed,dried,chopped
1/2 cup chickpeas -drained and rinsed
1/2 cup cherry tomatoes
1/4 cup red onions, sliced
1/4-1/2 cup feta cheese crumbles
1/4 cup dried cranberries
1/4 cup walnuts
1/4 cup fried onion crisps
Instructions:
Make the dressing by adding all the ingredients in a small container and mix well so the oil and vinegar can become one with the herbs and form the vinaigrette.
If you are consuming right away, you can do what i did, add half of the dressing to the Kale and massage so it softens. If consuming later, skip this part and proceed to add all the ingredients in a salad bowl, starting with the Kale, and refrigerate. Add the dressing right before serving or 30 min before.
