1.5 pound ethically sourced bison
Carrots, onion, celery, and garlic, diced
28 oz diced tomatoes
2 boxes veggie broth
Lentils, rinsed and soaked in the fridge
Salt, red wine vinegar, and red pepper flakes
Parm for serving

Brown the meat and drain
Sauté carrots, onion, celery, and garlic until soft
Add the meat back, plus tomatoes and broth
Bring to boil and reduce heat
Season with salt, red wine vinegar, and red pepper flakes to taste
Simmer ~20 min
Add lentils and simmer until soft
Divide into bowls, top with freshly grated parm

Just as good with ground beef, chicken, or turkey, or meatless.
