First time making quick and easy eggs with spinach, feta, and tomatoes

  1. Recipe:

    9 oz baby spinach

    1/4 cup diced red onion

    8 halved cherry tomatoes

    2 tbl feta

    2 eggs

    Salt and pepper

    Sauté the onion, then add spinach to the pan and wilt. Stir in the tomatoes and cook on medium-low another minute. Push the veggies off to the sides of the pan and place two eggs in the middle, season with salt and pepper. Cover and cook to desired doneness. I cooked for 4 minutes to achieve solid whites and runny yolks. Once the eggs are done, sprinkle with 1-2 tbl of feta.

  3. it’s perfect. great job. looks like you also added a ‘chefs kiss’ of pepper and ? maybe some EVOO drizzle FTW.
