**Hashbrown Breakfast Casserole
Ingredients
20 ounces shredded hash browns thawed
• 1 pound sausage cooked, crumbled, and drained
• 1/4 cup onion finely diced
• 1/4 red bell pepper diced
• 1/2green bell pepper diced
• 2cups cheddar cheese shredded, divided use
• 8 eggs
• 1 can evaporated milk 12 ounces, or 1 ⅓ cups milk
• 1/2 teaspoon Italian seasoning or your favorite herbs/spices (optional)
• 1/2 teaspoon Kosher salt or to taste
• 1/4 teaspoon black pepper
Directions
Preheat the oven to 350°F (if baking immediately). Grease a 9×13 inch pan or a 3qt baking dish or spray with cooking spray.
Heat a large skillet over medium high heat. Brown the sausage, breaking it up with a spoon, until no pink remains. Drain fat.
In the prepared dish, add the hashbrowns, cooked sausage, onions, bell peppers, and 1 ½ cups of cheese. Gently mix the ingredients together and spread evenly in the pan.
In a large bowl, add the eggs, evaporated milk, salt & pepper, and Italian seasoning to a large bowl. Whisk until well combined.
Pour the egg mixture over the hashbrown mixture and sprinkle the remaining cheese over top.
Cover the dish with foil and refrigerate overnight if desired, or bake immediately.
Bake uncovered for 55-65 minutes or until cooked through.

**Spinach Artichoke Chicken Casserole
Ingredients
2 cooked skinless chicken breast, shredded or cubed
½ cup Whole Milk Cottage Cheese
¾ cup Sour Cream
2 cups shredded mozzarella, preferably – divided
¼ cup chopped fresh parsley
1 teaspoon salt
1 ½ teaspoon garlic powder
1 teaspoon dried thyme
Juice and zest of ½ lemon
2 cups fresh baby spinach
18 oz drained artichoke hearts, halved (drain and discard liquid!)
Directions
Preheat oven to 375 degrees F. Grease a 1 ½ qt. casserole dish and set aside.
In a large mixing bowl, add cooked shredded chicken, cottage cheese and sour cream. Give it a quick stir to combine. Add 1 ½ cups shredded cheese, parsley, salt, garlic, thyme, lemon juice and lemon zest. Stir until fully combined and evenly distributed. Gently fold in the spinach and artichoke hearts just until combined. Pour mixture into the greased casserole dish and sprinkle the remaining ½ cup shredded cheese over the top of the casserole.
Bake at 375 degrees F for 40-50 minutes, or until the cheesy top is lightly golden brown.

Mexican Cornbread Casserole
Ingredients
2 – 8.5 oz. boxes Jiffy corn muffin mix
1 pound ground beef
½ cup diced onion
½ cup diced bell pepper
1 10oz. can diced tomatoes with green chilies
1 4oz. can diced green chilies
1 16oz. can whole kernel corn, drained
1 16oz. can cream style corn
1 taco seasoning packet
2 eggs
2/3 cup milk
3 cup shredded cheese – Cheddar, American, Monterey Jack, or a combination

Below in the description box along with the playlist and now I’m going to show you what it is I made for this collaboration and I did make three different recipes so I hope that you enjoy the Video this first recipe is a breakfast casserole and I will leave the link to the recipe down below but you need a pound of any type of breakfast sausage whatever flavor you like and I like the hot sausage just because it has a really
Good flavor to it and it has a lot of seasoning in it so it does season everything well and I don’t find it to be too spicy but you also need eight eggs A4 cup of onions and I have a little bit more than a four there a half
Of a red and a half of a green bell pepper chopped up one can of evaporated milk some salt and pepper to taste you need a 20 o bag of hash browns thawed so make sure you have them thawed and um like I said 20 oz bag and I think it was
Two cups of cheddar cheese and I’m using sharp cheddar cheese for this and this step is not required but I decided to sauté the uh onions and bell peppers just because I don’t like my veggies to be you know crunchy in things like this so I wanted to cook them just
A little bit uh to start to you know start the cooking process on it so I just softened them up just a little bit and I will take these out of the pan and put that on the side until later but take the sausage that you have
And you want to just Brown that up until it’s completely cooked and while I finished the sausage I took a 9 by3 14in baking dish sprayed it with some non-stick spray then added the hash browns to that then I added the sauteed onions and bell peppers but you can add them raw if
You want you don’t have to you know sauté them and then I just mixed it in it didn’t record it but I did add about 1 and 1/2 cups of the cheese to the top of that then add the cooked sausage on top of that and basically you’re just going to
Mix everything together uh you just want to evenly distribute it throughout uh the you know the dish and then just put a even layer you know level it off and I’m trying to get you know the sausage sort of uh evenly distributed but then I put my eggs in a bowl and
Added that evaporated milk then then I seasoned it with some salt and pepper and feel free to use whatever type of uh seasonings that you like for your eggs and I also seasoned it with a little bit of Tony saseries because that’s what we you know like with this and I didn’t add
Too much just a little bit but as I said just add whatever seasonings that you and your family enjoy and then I just mixed it up really well you want to just make sure um um the egg gets mixed in with all of that and then just pour the egg mixture over
The potatoes with the sausage and onions and everything and just try to evenly uh pour it over the top try to get it all coated and once I was done with that then I added the remainder of the cheese that I had left so it should be about a
Half a cup or so but you can add a little bit more if you want uh if you want less you can but I always find it’s better with more once I did that I put this in the oven on 350 between anywhere between it says 50 and 65 minutes so
Until it’s completely cooked I think mine was about 50 minutes that I left it in and it was fine so like I said it’s just going to depend on your oven for how long you would need to leave it in and I did make it uncovered in the
Oven and this is what it looks like when it comes out it was delicious so very simple and easy breakfast that you can make ahead of time as well you can put it in the refrigerator overnight and put it in the oven in the morning so you
Have it ready to go or you know fix it up the day that you want to uh make this so really delicious like I said you can add anything to this you can add bacon ham whatever you’d like so make it your own and this next recipe is a chicken
Spinach artichoke casserole and this one’s very simple and easy as well to make and fairly healthy so very simple ingredients you just need some artichoke carts quartered you don’t want a marinated and it said about an 18 Oz jar is what she had I couldn’t find an 18 Oz
Drawer so I just used two cans and that was more than enough uh for this uh two cups of mozzarella cheese a half a cup of cottage cheese and 3/4 cup of sour cream the juice of half a lemon and the zest as well and the recipe also did
Not call for fresh garlic but I’m adding it because I like it so uh you don’t have to do that but I’m going to add that a 4 cup of parsley 1 and 1/2 te spoons of garlic powder the recipe called for a teaspoon of salt I’m adding
Just a half a teaspoon cuz we don’t use a lot of salt and one teaspoon of uh thyme the recipe did not call for onion powder or Tony sasher but I felt it needed a little more seasoning so I’m adding that also 2 cups of baby spinach
And two chicken breasts uh Shredded or cubed I’m using a rotisserie chicken and did use a little bit of the dark meat as well because I wanted to have over a pound of meat uh for the recipe and I just use that to kind of you know fill
That in for me because I felt like it didn’t have you know I needed a little bit more chicken but very easy and simple to make so you just need to heat up a pan and add your spinach to it the recipe did not call for doing doing this
But I think it basically just said to add your spinach to the bowl with the ingredients uh as is but I didn’t want to do that I like my spinach sort of you know sauteed first and I did add the garlic to this the fresh garlic and just
Seasoned it up uh it really does you know make a difference I think when you do it this way but I guess you can put it you know uh without sautéing it in the recipe it did not specify that but I just felt like it was going to be too much to try
To mix in so that’s why I’m doing it this way and it turned out fine so you can see how quickly this is it’s not sped up it’s not edited this is how quick that spinach uh cooked up in that hot pan and that garlic was really good
With this as well because it just gives it you know a little bit more flavor and I added a little bit more spinach than what the recipe called for since I was sautéing it and I felt like it you know added a little bit more you know to the
Recipe when the spinach was cooked I put that to the side then I took a large bowl and added my chicken to it um which I thought was a large bowl but I probably could have used a little bit larger one and added the Cott cheese then I added the sour Cream then you will also add the mozzarella cheese and you want to reserve half a cup so take a half a cup out and put that to the side then add the rest of it to your bowl and then you’re going to mix this up until you know all of that is Combined and just mix everything up you will find that it is somewhat of a thick you know mixture that you’re going to be mixing um that’s why it’s good to have a really large bowl to do this in but I made it work with this one and then I
Added the parsley then the seasonings and then mixed again so I’m just kind of you know adding and mixing as I go add in the lemon juice and the zest then mix that in then I added the spinach to this and I guess if you’re going to add just the
Raw spinach you would do that but as you can see I feel like it would have been you know too much to try to mix in then add the UT Cho carts and make sure they’re drained and I also dried them off a little bit with a paper towel just
To get any excess moisture off um it did say not to have you know a lot of liquid for this um so I just you know mixed it in and you can see like I said it is you know a thick mixture and a big bowl would have helped
I did add a little bit more sour cream uh just because I think you know it needed it so just you know use your judgment on this as you go when you’re mixing it onion powder and the Tony saseries like I said that’s optional you
Know but I feel like it did add uh some flavor to this and it wasn’t Bland so just mix again then spray a 9 by 13 in baking dish and just you know put that mixture into it you will need to spread this out as evenly as you can get It then I added that half a cup of cheese that was reserved for the top and I just sprinkled that on you can use as little or as much as you want I chose to add a little bit more than that just because I felt like it needed it and we
Like a lot of cheese so add as little or as much as you like and I put this in the oven on 350 for about 35 minutes and this is what it looks like when it comes out very good this had a very nice flavor to it and like I said I think
It’s going to depend on on the type of seasonings you use as well parmesan cheese would have been good in this I didn’t have any so that would be an option as well but very easy to make and I think your family would enjoy this one especially if you like spinach artichoke
Dip this last recipe is a Mexican cornbread casserole this one is really easy to make and uses very simple ingredients so I used two boxes of the corn muffin mix and that’s the Jiffy brand one can of whole kernel corn and a can of creamed style corn you will need
4 oz of chopped green chilies one can of Rotel with the green uh chilies in that 3 cups of your favorite cheese and I am using the Mexican blend you can use cheddar or mode jack whatever you prefer and 23 cup of milk a half a cup
Of green bell peppers chopped up and a half a cup of onions chopped up and I tried to chop those a little you know small two eggs and a pack of taco seasoning mix one pound of ground beef and now I’m going to show you how quick
And easy this one is to put together and really delicious so Brown your ground beef and you want to just Brown it until it’s completely cooked but you also want to make this into smaller you know pieces so just you know break it up as best you can then add the
Onions the bell pepper and just kind of cook this down a little bit maybe 5 minutes or so you want to just get those to soften up with the Meat then add half a can of the Corn the regular corn so don’t use all of it and the same with the cream style corn add half a can then add the whole can of the Rotel tomatoes with the green chilies add the green chilies that whole can mix it up
And then you will cook this for about um just a few minutes and then add the taco seasoning mix and then you will cook this down for about 5 minutes you want to make sure that that powder gets dissolved within that mixture and as I said about 5 minutes is good
Enough once you’re done you’ll put this to the side and then make the uh cornbread part of it so add the two bags of cornbread to a bowl add the milk and then add the eggs add the rest of the cream style corn and then also add the rest of the whole colel
Corn you want to mix this up until everything is completely combined so get it good and mixed then spray a 9 by 13 in baking dish with some non-stick spray pour half of the cornbread batter into that and just it’ll be a thinner layer but then
Add that meat mixture on top of that and just try to get it as evenly over the top as you can without you know really stirring anything Up then add half the cheese onto This and you need to put the rest of the batter on top of the cheese so the easiest thing to do with this is just take a spoon and just put it you know over the top in little spots that way it makes it easier to spread it because if
You pour it on it’s going to kind of mess it up a little bit but it’ll also be harder to spread it to the edges of the pan so just as you go just kind of you know put spoons spoonfuls of it in little you know all across the top and
Then just spread it across and you should be good to go then add the rest of the cheese on top and and if you want you can add a little bit more if you’d like but I just followed the recipe with this one and just you know added what was there also
I baked it on 350 for about 35 to 40 minutes just to make sure everything was you know completely cooked with the cornbread but it turned out great you can see the layers there after I had a piece cut out and this one was just delicious it had a lot of nice flavors
In this this would be great as a a taco Tuesday maybe uh recipe if you want to do something other than just regular tacos this would be one uh to add to that so really enjoyed this one and please don’t forget to check the playlist Down Below in the description

Hey! I’m a newbie here from watching Sammi. I absolutely love that the spinach artichoke chicken casserole used cottage cheese instead of cream cheese. I’m definitely going to be trying it! I think it will make a good meal prep that I can freeze part of and have for lunches later.
