Full written recipe for Chicken Popcorn
Prep time: 10-15 minutes
Cooking time: 15-20 minutes
Serves: 3-4 people
Peri Peri Spice mix
Ingredients:
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TBSP
SPICY RED CHILLI POWDER | तीखी लाल मिर्च पाउडर 1 TSP
ONION POWDER | ऑनियन पाउडर 1 TSP
GARLIC POWDER | गार्लिक पाउडर 1 TSP
BLACK PEPPER POWDER | काली मिर्च का पाउडर 1/2 TSP
DRY MANGO POWDER | आमचूर पाउडर 1 TSP
OREGANO | ओरिगैनो 1 TSP
SALT | नमक 1 TSP
SUGAR | शक्कर 1 TSP
Method:
In a mixer grinder jar, add all the peri peri spice mix ingredients & grind them well to make a fine powder, you can also add all the ingredients in a jar & mix them well by shaking the jar, just substitute granulated with powdered sugar.
Your peri peri spice mix is ready.
Fried Chicken
Ingredients:
CHICKEN | चिकन 450 GRAMS (BREAST)
SALT | नमक TO TASTE
VINEGAR | सिरका 1 TSP
GINGER GARLIC PASTE | अदरक लेहसुन की पेस्ट 1 TBSP
PERI PERI SPICE MIX | पेरी पेरी मसाला 1 TSP
REFINED FLOUR | मैदा AS REQUIRED
SALT | नमक TO TASTE
ICE COLD WATER | ठंडा पानी
Method:
Cut the chicken breasts into long strips & then cut the strips into bite sized cubes.
Transfer the chicken cubes into a bowl & add salt, vinegar, ginger garlic paste, peri peri spice mix & mix well, set it aside to marinate for 10 minutes.
To crumb the chicken, add the refined flour into a large bowl & season it with salt, & along with that you will require a large bowl filled with ice cold water.
Add a couple of marinated chicken cubes into the flour & coat them well by tossing them around in the flour, make sure you press gently while mixing.
Then shake off the excess flour off of them & place them in a spider, dip the chicken in chilled water then lift the spider up & let all the excess water drip off, add the chicken cubes back into the flour & coat them again by mixing & tossing them in the flour, this will help you get those perfect & crispy crumbs.
Coat all the chicken strips similarly then fry them in moderately hot oil (170 C) over high flame until golden brown & crisp.
Once fried, remove the chicken from the hot oil using a spider, make sure that you let all the excess oil drip off & transfer them into a bowl.
Sprinkle peri peri spice mix over the fried chicken & toss well.
Your hot & crispy chicken popcorn is ready.

What’s up guys Sanjyot Keer here Welcome to YFL! If you or your children are one of those people who orders a lot of fried Chicken Popcorn from restaurants a lot, & love it, then this video is perfect for you.
Coz today, I’m going to show you how to make a perfect Chicken Popcorn at home. Now, among the things that we like about Chicken Popcorn, one is the outer crumb or crumbly bits, how to get that crumb, It is not bread crumbs & to achieve it is a different process.
It’s an easy but different process. I’m going to show you how to get those perfect crumbs, for crispy & crumbly Chicken Popcorn Secondly that they are very succulent from within, which actually isn’t the case every time that we get from outside. They are dry if they are sitting for too long.
These ones will be juicy & succulent from inside. & along with it a spice mix is sprinkled on top, which is very similar to Peri-Peri spice mix. So, I will also show you how to make that spice mix.
So, this is going to be your YFL Fried Chicken video, but a boneless one as it is Chicken Popcorn Some other day I will show you how to make one on the bone too. Today let’s see how to make Chicken Popcorn.
So, for Peri-Peri Spice mix take 1 tbsp Kashmiri red chilli powder, 1 tsp spicy red chilli powder, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp black pepper powder, 1 tsp dry mango powder, 1 tsp oregano, 1 tsp salt & 1 tsp sugar. Grind everything into a fine powder.
Optionally you can also mix it in a jar, if you take powdered sugar. You can see that our Peri-Peri spice mix is ready. This Peri Peri spice mix can be used not just for this recipe but anywhere that you need to use Peri Peri- it can be used.
In store bought version there may additionally be MSG or ajinomoto or any other taste enhancer, It gives a coated tongue kind of feeling so you feel like eating it more. But even this Peri Peri masala is perfect, use it. & the Chicken Popcorn that you get outside, has this sprinkled on it.
So, when you add this, you will get that perfect delicious flavour. I made this spice mix initially so that we can add it to the marinade to be able to flavour the chicken from within.
Now that the spice mix is done, it is important to cut the chicken correctly. Let’s see how to cut the chicken. I’ve taken 450 grams of boneless chicken breast. Cut it diagonally like this into thick slices. Your knife should be directed diagonally.
Once you have cut the strips, then continue to slice it into cubes. The cubes need not be perfect, you can cut them randomly. But they should be neither too big nor small. You can see how I’ve cut the chicken, so cut all the chicken like this.
Once you have cut the chicken then transfer it into a bowl. Now, add salt to taste, 1 tsp vinegar, 1 tbsp ginger garlic paste, 1 tsp Peri Peri spice mix, Mix everything well & let the ingredients coat the chicken very well.
Once you have mixed everything, cover the chicken & let it marinate for 10-15 minutes. Once your chicken is marinated then in another big bowl take lots of refined flour. I’m taking about 200-250 grams of refined flour here. Add some salt to the flour & mix it.
Next to it into a bowl take ice cold water. So, prepare this setup. Once you have done this prep, your job will be easier from here, okay! I’ll tell you why we have made this setup. Before that I’ll tell you that we’ve used chicken breast as it is very easy to cook.
It cooks really quickly. In commercial cooking, chicken is fried in a pressure cooker like vessel. So due to that pressure the chicken cooks really fast & does not dry out very quickly. You can also use thigh, but it will take longer to cook,
But results will be good, you just need to make sure that the chicken is cooked well from within. Using thighs will increase the cooking time. That’s the major difference. If you are using chicken breast, even then your chicken will be soft & succulent from within,
You need to fry it properly, which I will show you how to do today. Now, let me tell you why we’ve done this setting. After marination, we have to double coat the chicken. Double coating will be done like first dip in flour, then cold water & again flour, which gives that crumb.
To get that crumb, I’ll just show you how to coat the chicken. Take 5-6 cubes of marinated chicken & add the the flour. Nicely coat the chicken in the flour. Once nicely coated, then take a strainer, add chicken to it & dust off excess flour from the chicken.
Now, dip this chicken in ice cold water. So dip it nicely & then remove it. Remove it & add it to the flour again. Then sprinkle more flour on it. & now massage it nicely with your hands. Massage it nicely until you get a crumb.
So after coating the chicken with flour & water, then massaging flour again, will result in the crumb. I’ve massaged the chicken nicely for 1-1.5 minutes. After dusting excess flour, you can see that the chicken has the same crumb like the store bought one.
Take it out in a sieve & by doing that you can remove the excess flour. Similarly coat the entire amount of chicken like this. I’ve shown you how to crumb the chicken. You can see that a perfect crumb is formed. This is how it is crumbed.
In bony fried chicken recipes in many recipes the chicken is marinated in buttermilk, or there are other ways like marinating it in brine as well. Now boneless chicken doesn’t need all of that. I’ve added some vinegar to tenderise the chicken. & have kept the rest of the marinade simple.
In one of my earlier videos I had made Tandoori chicken strips for which I added tandoori spices. So you can switch up your spices here & there. But this one will be very very good, very very tasty, this is how you can marinade it by a simple method.
Once you have crumbed it, I know a lot of comments will come whether we can store it for later use. Yes absolutely you can. Just don’t dump them together. Add a layer of chicken strips then butter paper, then other layer.
Other thing that may happen is that the crumb will lightly flatten & won’t be as good as freshly crumbed chicken. But you can definitely store it. Keep it in deep freezer & use it upto 2-4 days without any problem. Now, I’ve crumbed the chicken, let’s see how to fry it.
Your oil should be nicely hot at about 170 degree Celsius. Once the oil is hot, then add chicken to it. Don’t overcrowd the oil or add all chicken pieces at once otherwise the temperature of oil drops suddenly. So fry the chicken in batches & your flame should be on medium high flame.
So that chicken cooks well from outside & inside as well. Just like I mentioned earlier that chicken breast cooks quickly. So the faster that you cook it, the softer & juicier your chicken will stay. Fry it until it is golden brown in colour & crisp.
Once fried, remove with a strainer. You can see chicken is perfectly cooked. Let the oil drain out properly. Once the oil is drained out then transfer it to a bowl. After adding to the bowl, add peri peri spice mix & toss it to coat with the spice mix.
You can see how perfect these crumbs are & they look so crispy. Our Chicken Popcorn is ready. Let’s plate it YFL style. Did you see perfect Chicken Popcorn at home & it is so easy to make.
