Had one zucchini, 2 carrot stubs, a shallot, sum dried tomatoes and 2/3 of a yellow bell pepper. Sautéed them in Kirkland EVOO, oregano, basil, paprika & S&P.
I made a dressing wit risotto & pasta water, seasoned with S&P, oregano, basil, white pepper and the left over sun dried tomato oil from the spoon I dug them out with. I then topped with toasted pine nits and served with a side of broccoli seasoned with lemon pepper and EVOO.

I rarely measure out my spices, just shake til my heart is happy and my tongue content.

    And it’s wagon wheel pasta, as evident in the picture. Came out really good and I’m ready to finish the leftovers today if my wife doesn’t beat me to them.
