Spicy Toasted Coconut Upma

  1. ###Ingredients

    * 1 cup semolina flour
    * 3 cups hot water
    * 2 tbsp olive oil
    * 1 tsp mustard seeds
    * 1/2 tsp cumin seeds
    * 1 green chili or 2 small green chilies
    * pinch hing
    * 1 tsp ginger paste
    * 10 curry leaves
    * 1/4 cup chopped carrots
    * 1/4 cup green peas
    * 1 tsp salt
    * 1/4 cup grated coconut
    * 6 cashews
    * handful coriander

    ###Instructions

    1. Boil 3 cups of water. Microwave frozen grated coconut for 30 seconds.
    1. Heat oil in a pan. Add mustard seeds and wait for it start popping. Then add cumin seeds and sauté for a few seconds.
    1. Add ginger paste, chopped green chili and sauté until fragrant. Add a pinch of hing.
    1. Add chopped carrots and sauté for 3 minutes until they are cooked. Add frozen peas, mix and add in semolina flour.
    1. Add in 1/2 cup water, mix and repeat the process until you have finished the water.
    1. Close the lid and let it remain in the steam for 5 minutes. Meanwhile, toast your cashews and toast your grated coconut in some oil until it browns.
    1. Mix in the coconut and serve Upma with more toasted coconut, cashews and chopped cilantro
